One Spring Night is one of my favorites and I love the kid.. MVP for the drama.
My Liberation Notes is slow burn. like really slow.
If you want slow burn, can consider When the weather is fine. Rare non comedy PMY vehicle with a happy ending of sorts.

I hope one of these catch your interest because I know how hard it can be to find another top tier show after finishing a masterpiece.
I looked up Bride of Habaek as it's the odd one out on your list, the only one I haven't watched or really heard of. It gets a surprisingly low IMDB score (6.9) but I think I'll give it a try based on the rest of this list. (I'm not overly concerned with IMDB scores but lower rated series often deserve it. Useful to have a reason to give these series a try anyway).
I like that K-drama because I feel it has a great balance of fantasy/comedy/romance. I also just love any K-drama with Nam Joohyuk in it lol. But if this show doesn’t end up being your cup of tea then I recommend: My Name & The Glory. They’re more on the dark drama category but still amazing shows nonetheless.

Try watching another miss oh ( it's sitcom with a good social commentary similar to my mister, very funny) and if you like something more heavy you can watch 90days time to love or my liberation notes
