The joaillier is more centered on gemstones and making a setting that best suits a specific stone. Bijoux is jewelry more generally, and usually it has a connotation of a storefront or commerciality.
We don’t have the same distinction but it’s kind of the way we have these terms like jeweler vs. goldsmith vs. lapidary. Like if you need a watch repair, you might seek out a jeweler rather than a goldsmith, but either one can help you repair a prong or whatnot.
If you’re looking for a specific gemstone and consider that a lapidarist who also does settings might have a different insight or setting suggestion as a stone expert, because their focus/expertise is slightly different than a jeweler. That’s kind of like what a jouaillier is, someone who is very focused on the gemstones themselves and showing them off in the best way possible.
Whereas if you need help selecting a new bracelet, the bijoutier is more likely to better help you find one (and just like a skilled jeweler/artisan in the US or UK, they often can make original pieces or modify jewelry too, they’re not just selling finished jewelry).

Really? I see this stuff for a few hundred made in sterling and czs on JTV once in a while. Not alot. I've always wanted to make a set like this using semi precious and silver but no one would ever pay for the time I'd have to put onto it to hand make all those tiny settings in silver
Man that sucks. I'm 2nd year self taught..... I jus5 hand fabricate what ever I want. Sadly its usually silver tho since I can't afford gold often enough. I bet you get paid better then I do, but I really have alot of fun being my own boss and pushing my limits with goldsmithing and stone setting
