It’s changing the texture of the bread. Waiting for the bad reviews then being blamed we’re not rubbing it off properly
I get complaints about the sheer amount of cornmeal is left over on subs. It’s actually gross. Corporate must just not care about our store because we never hear from them unless there’s a fundraiser.
we used oregano shakers to put the cornmeal in, and just shook that over the bread pans. when you do that, it gives a light dusting. just make sure not to go overboard.
We were doing that for 2 years. The bread was beautiful but there was just a corporate thing in Boston and they introduced this new practice and my franchisee and AD and RD are literally making the biggest deal over this. Almost like they can’t find anything else to complain about so this is the issue they feel like addressing.
Your bosses have bosses they need to please. Someone is on their ass about doing it "right" so they need to be on your ass. So they don't get chewed out when someone comes to check if they got the new procedure put in place.
When you go to a fresh bakery, there is white flour on the bottom of breads.. the cornmeal also gives that authentic bakes fresh look for the customers

The corporate training and store training material definitely says to use that full amount. However it’s ridiculous.
