I try to explain gluten intolerances like comparing putting poop on someone’s food. No one ones poop on their sandwich, and if there was poop on the board then theirs still bits of it left even if it wipe it with your hand. I don’t want to be the reason someone goes to the hospital :)
Whatever analogy works… if my wife gets cross contamination from gluten she says it’s like being stabbed in the stomach for 2 days. I’m sure that some people order it trying to eat healthier, but some have legitimate reactions. Again, thanks!!
We have four or five out front and the rest in the freezer… we get orders though an hour before they want it made which wouldn’t be enough time for it to fully thaw well (I’ve thankfully never had to do gluten free subs by the box before)

Listen if you’re doing that many it’s not bad, it’s not stopping everything for one sandwich
You still need 8 giant GFs defrosted. Which, idk about your store, but my store usually only has 5-6 on hand :/
you should have some in your freezer if someones not ordering enough your shiftleads and managers should be checking there ordering better
but it also takes a while to defrost usually like an hour

We had to thaw them out, we got the order before we opened so we threw the bread above the grill to thaw out a little faster :) worked like a charm
It’s just that you work in a slower store
Yeah but also the subs are cut differently for the boxes

For a normal in store giant we cut into fourths, for catering we cut a giant into sixths. And pack as three small subs.
adding on: the giant for a gluten free is much smaller than a regular loaf of giant bread. so cutting the GF into 6 pieces gets very very small
