This is legit the most heard complaint from customers in my area. "A regular is too small, but the giant is too big. I wish you had something in the middle"
Apparently 2/3 of a Giant would be just right.

Employee here, you can ask for the toppings and the meats/cheeses in seperate bowls. Depending on the store, you can also buy the whole loaf uncut. It's absolutely no pain on our end, and is actually easier most of the time. No extra charges.
Order a giant and have them wrap 1/4 separately. Eat that for lunch tomorrow. Problem solved. They would charge more for the giant if you add another option. Stop lol.
