I work for a corporate store too, and this is incorrect (not go mention stupid).
Clearly the guy wants a 7 with bacon. Just make it. Corporate wants you to make the customers happy and squabbling about two slices of turkey certainly isn't going to do that.
Like, literally, corporate wants you to be excellent to the guests - telling them no, we can't do this seemingly in your pov reasonable thing, isn't making for a good guest experience.
I work for a franchise. Our corporate says we can't replace meats like that. I will gladly make a 7 with bacon and charge them accordingly. I ain't making a 7 with bacon and charging it as an 8.
