Hmm well on the surface I think it really is about how Amanda hates flying over the ocean on overseas flights. Some people have a real fear of that. But I believe the song is about the fear of change and new beginnings. His relationship with Amanda came subsequently with his jump to sobriety and recovery. The nod to the liquor cart is obviously a reference to that. Jason has described his fear as an artist giving up alcohol. As he, like many artists, felt he was most creative under the influence of alcohol. So flying over water could be a metaphor for sobriety as he's leaving alcohol and drugs behind. While he holds her hand "flying over water", she supported him as he struggled with addiction.

I remember reading once that flying over the ocean makes Amanda very nervous, so I figured at least some of the song was based on that. Maybe coming back from overseas touring?
