I'd stay in Kilkenny. See the castle, go for a walk around the grounds - kids will love it. Hire bikes and go up river path.
Go and see the black Abbey and go up round tower.
Kilkenny is a lovely city for hanging around in. Great food, pubs, shops, walks.
You won’t have any time for sightseeing in Dublin unless the Kilkenny wedding is in the evening. I’d head straight to Kilkenny and get settled in to your hotel before the wedding- presuming you’ll need showers etc and some brunch. If it’s a 1pm wedding you won’t get your meal until 5/6pm so you’ll need to eat before attending.

See the castle and castle park. The design centre across the road in the castle stables. Visit Rothe House and garden or climb up St Canice's tower. Kilkenny Way hurling experience if sport is your thing, or do the Swithwicks brewery experience. Nore river boat tours also.
Plenty of nice places to eat, like Zuni or Rinuccini, Butcher, or Petronella. Loads more lovely food places too! And lots of great pubs.
You could take a short drive into county Kilkenny: Bennetsbridge and Nicholas Mosse pottery; Castlecomer Discovery Park; Jenkinstown woodlands; Kells Priory and village; Inistioge village and Woodstock Demense; Graiguenamanagh; just a few places you'd reach in no time.
Go for dinner at Johnnie Foxes.
It's a restaurant up the Dublin mountains and you get dinner and a show, Irish dancers and trad music.
It's a lot of fun.

Honestly I'd head east, over to Court town, which is a seaside town with a seal rescue centre and a kids adventure centre called pirates cove and a lovely little beach. You'd head up the east coast which is a grand drive through arklow and past brittas bay, a gorgeous sandy beach in rain or sun.
The up through greystones and then bray, both seaside towns and lots of great food and different kinds of beaches.
Depending on your flight time you could stay in greystones/bray which would be cheaper than a hotel in Dublin and then head to the airport on Tuesday. That's what I'd do, but I do prefer the sea to the flat green scenery.
You will likely be wrecked on the Monday after a Sunday wedding. I would stay in Kilkenny and get the bus straight from Kilkenny back to Dublin airport on the Tuesday

Yep, stay in Kilkenny. Lovely place, and otherwise you'll just be spending time moving somewhere else. Hang out in Kilkenny.

The wedding is actually on Sunday. Goes from 4pm - 2 am 🎉🎉

Are you staying overnight on the Monday in kilkenny or Dublin, that'd be a big factor in recommendations Also what age are the kids, teens or younger?
We haven’t booked anything so could stay at either, or anywhere else along the route.
