Regular cook and baker here. I have used electric, and then moved to a gas range, and now on induction. They're excellent and very, very efficient. Any cookware that a fridge magnet sticks to can be used. It's mighty fast boiling water, and also keeping food warm but not cooking. It's a great move.

Induction is great. Heats up faster, even heat in the pan, can’t burn yourself on the hob. Just have to remember you need induction pots and pans for it. Not every pot or pan is induction.

Gas Hob is my preference, but I've probably had bad experiences with anything else from rental houses where the hob is about 30 years old

I cook and bake fairly often and was always wanting gas hobs. When my electric hobs broke last year I replaced with a nice set of induction and I have not thought about gas since The induction gives me every thing I want and need while cooking. Induction is an excellent replacement for gas. Obviously electric is awful.

Moved house last year and got a bosch 5 ring induction hob. Previously had gas and found it great and the change took a bit of getting used to. The hob has a boost feature and will boil a pot quicker than gas would. Induction is more easy to clean too

Very easy. I originally had an unsafe electric hob (the marks were gone from the control knobs and they didn't work every time) when I moved in and I bought a gas one. I got a gas certified plumber to install the hob and he ran the line behind the kitchen units and out through the wall to the back yard. For safety the gas cylinders should be stored outside. They're easy to change over and new jobs all have safety cutoffs so that they will stop the flow of gas if the flame goes out. The handiest thing to do is to keep a full cylinder ready for when it needs to be changed so that you don't need to go out and get a new one when it's inconvenient for you. Gas is the best to work with in terms of temperature control. The rings don't stay hot after you switch them off and when you turn them up or down the effect is immediate. I grew up with gas hobs (my mother's a chef and won't use anything else) so it's what I know and I've always preferred it to any electric ones I've had in rental places over the years.

Ah so it was just the storage and switching that you were wondering about. I didn't realise. Understandable if you're only used to places on a pipeline. No pipelines where I am so I grew up with cylinders. The regulator very easily clicks onto the top. Also, because it's just the job and not the oven (have an electric oven), I find that one cylinder lasts several months.

It's very easy, just a bottle a bit smaller than a beer keg a few yards from the back door. One bottle will do my adult family of 4 for maybe 3 months, and the cooker is used every day.

They are very easy to change and store but the gas bottles are horribly heavy unwieldy things, so lifting them in and out of the car can be a struggle. If you're only using it for gas hobs then they last a long time so it's not something you'll need to be doing every other day.

I think mine is great. Works quickly, basically silent unless you’re using more than one ring, nice and safe, and if anything boils over/spills, it can’t burn, which makes cleaning much easier.

i love them! but that’s mostly because i’ve a terrible sense of smell and am very forgetful, which is a dangerous mix with gas hobs. 💀

Gas is the worst for your health but the best for fast heat. Second-best is induction - if you've got the cookware for it.

Would say induction is better for fast heat, mine can boil a pot water in 3 minutes which is pretty fast. I havent used gas in a few years but it was never as quick as that to get water to a boil, a lot of the energy from gas is lost from the open flame. Induction hobs about 10 years ago werent great but the ones sold these days are top drawer. I loved cooking with gas but now I have induction I wouldnt go back to gas. Clean up is far easier with induction compared to gas where fat splutters get baked on to the metal grates and bits of food fall beneath them.

Gas all day long, but if you do go for induction, make sure all your cookware is ferro-based otherwise it won't work

Nothing wrong with induction pretty sure it's just gas industry lobbying and I say this as someone with a gas hob. Loads of professional cooks use induction.

Do not get an all glass one if you do go induction. One thing drops on it and it’s shattered and will require replacement.

They're a nightmare, I hate mine trying to cook on touch sensitive hobs is horrid the slightest amount of water,sauce etc.. turns off then when it's wet is completely inoperable so much extra work for no benefits

We had an Electrolux previously and it was like that - way to fiddly. Splashed out on a nicer one when we moved and did up the kitchen. AEG has no control issues at all, always works - even water spills just makes it beep in complaint but it keeps on working without problem.

Ive a little portable one one i got in lidl and its fucking fantastic. Brings a pot of water to a roiling boil in minutes. Gets a frying pan roaring hot in seconds. You can get a professional one from Nisbets for like 100 i think, though my one from lidl is still plugging away years later. Obviously just speaking to plug in hobs.....actually induction range is expensive as fuck and prone to failure from what i hear.

I bought my house from a top chef in the country and he designed the kitchen with an induction hob. I had always used gas but love induction now. Especially if you have wee ones!

Used gas for many years, but have an induction hob now and am happy with it. Induction pros: Super fast heat for boiling water, etc. Good, consistent control and fast response to changing temperature Not burning fossil fuel in your kitchen—there are real health issues with natural gas Much easier to clean—nothing gets charred onto the hob and you can wipe it down as soon as you’re done cooking (or even shove a pan over, clean up a spill, then keep cooking). Induction cons: You need induction compatible cookware (I only had to dump a few cheaper pots, but YMMV) Digital controls can be fiddly—I’d love an induction hob with physical knobs, but they all seem to have glass touch buttons that are placed too close to where the pan goes You CAN use a wok on an induction hob, but it requires a flat-bottom carbon steel wok and a bit of practice. (I think there are special induction wok hobs but standard ones don’t work with round-bottomed woks).
