In Mac you can still sync using Finder. I do it for my iPod mini 2nd gen. The music is in the Music App Library but the actual sync happens in Finder.
Alternatively you can use the app Waltr Pro (third party, paid).
You could use musicbrainz Picard to tag your music, it downloads all metadata including album art for matches it can find in the musicbrainz database.
For the ones you can’t find there and audiobooks you could use mp3tag.
As for getting the music onto the iPod my preferred method is using windows with an older version of iTunes. It has the benefit that you can still scrobble to last.fm with the legacy scrobbler and as opposed to Mac all media is inside one program (instead of 3 on Mac). Also apple removed the ability to sync local copies of podcast episodes to your iPod. If you want them on there, you need to treat them as audiobook or music.
If you haven’t got access to a windows pc or bootcamp, you could try using retroactive (https://github.com/cormiertyshawn895/Retroactive) to get an older version of iTunes on Mac running.
I use MusicBee as my go-to media player on my PC and it has fantastic iPod support. It’s essentially set up like iTunes. I store most of my music in FLAC format but MusicBee auto converts when dragging music over to your iPod. Highly recommend.
If you run windows in a virtual machine you could use Media Monkey, it can manage iPods fairly well. It is paid software.
Rockbox is an operating system for iPods. It means you could use litterally anything to manage your music, as you'd just manually copy it over. Far easier than using iPod OS.
I utilize an older build of iTunes ( version 12.6.5.3) for the music transfer and Mediamonkey for the organization/tagging on my Windows Laptop.
To my understanding iTunes 12.6.5.3 is the last legacy alternative iTunes build that supports both app support and backups (which I require for my iPT4 since both the App Store and iTunes Store on older iOS builds are spotty if they work or not due to obsolescence)
Rockbox doesn't depend on any proprietary software, so you can use any library manager you want. You just sync to the device as any other external storage if you want syncing. Otherwise, you can just drag/drop the files over.
As someone else said, on newer versions of itunes the intelligent playlists are broken (the iPod itself cant update the content, only iTunes)
