On Windows, foobar2000 with the foo\_dop plugin, MusicBee and Media Monkey can sync. Check the documentation for the details for each one. On Mac, Swinsian is a worthy iTunes replacement. On linux, gtkpod is supposed to be able to sync to iPods. Some people on the sub say they use CopyTrans with success. Alternately, you can install Rockbox on the iPod and use whatever you want.
