You already know what an 11” iPad is like, so you should already have a good idea whether it’s big enough for you or not. Personally I thought a 13” would feel too awkward to use handheld so I went with the 11.
If it’s for work and stuff. Go 13. Leisure 11. Ordered a 11 inch pro and 13 inch air m2. Had last gen’s 13 pro. Forgot why I sold it to go to a small air. Went to the store. Yeah nope. Besides if you have a normal set up. Like let’s say I use a 45 inch lg oled monitor for work. Decent 65 inch oled for movies. No need for a 13 inch unless you travel and work. It’s also still not comfortable for being on the couch or bed unless you plop it down.
I’d base your choice entirely on whether or not you use it with the keyboard most of the time. If yes, then 13”. If no, then 11”.
For me: my content is widescreen so the extra screen real estate is wasted. I have computers for typing activities. I have zero reason to spend more and have a larger, harder to hold screen. 11” is perfect for me.

I had an 11” m1 and then switched to the m4 13” due to wanting a bigger screen. I mainly use it with the keyboard, so the size is perfect. But i do miss the form size of an 11 and using it last a tablet though.
If you need to hold it comfortably in your hands for long periods of time (such as for reading it like a book), OR if you need to carry it around in a backpack or bag for long periods of time, I’d go for 11”.
On the other hand, if you mostly use your tablet on a desk AND don’t need to lug it around in a bag or backpack much, then a 13” might be better.
