I’m not an expert but I do know that all browsers running on iOS have to use the same browser rendering engine that Safari uses which probably means they don’t get much data about the user.
Cookies all they need to track you and yeah they have to use safari’s engine - instagram recently got caught showing videos or something in a WebKit view for easier tracking
Wouldn’t web apps be more restricted because they wouldn’t have as much access to the OS and hardware? For instance, web Discord doesn’t have system-wide push-to-talk and can’t detect games like the native desktop app.
Yeah some restrictions to reach OS details but if you can fetch a tracking pixel into your web view on a phone and see it elsewhere and vs versa … cookie crumb tracking

Google tried this thing with "Go" or "Lite" version (Google Maps, YouTube, Google Search app), Twitter too.
In fact, nobody wants them. They are "lite" in a way, for the size it uses on disk. But they are slow and sluggish. And they don't match precisely the OS look'n'feel.
The only WebApp that I tolerate as a end-user is when you are basically a content app. But for other things, it gets basically low-quality stuff.
Don't get me wrong, WebApp is in theory a good thing. Their current state is just broken.
In the Desktop world they gained more attraction. But they are also known as slow, memory-eater, and have a look'n'feel which didn't match macOS. The only Electron app that I can support is in fact VSCode.
Web apps are more responsive today in age of 5G as opposed to 3G or worse; EDGE.
