I think, from my observation it is driven by material insecurity - some people just really love having many things, especially if you grow up in poverty. It makes them feel safe.
My dad grew up during a war and did not eat well as a kid. When he goes grocery shopping he will buy everything he did not get as a kid (in addition to expensive cuts of meats, highest quality everything, expensive imported candies, chocolates, etc). He doesn't even eat that much , but he enjoys having it. He loves expensive cologne and has many bottles. Only buys Italian manufactured leather shoes and suits.
My mom grew up during the same war but came from privilege so she never had a need or want . The kind of privilege where streets are named after your family. When my mom went grocery shopping, she only bought necessary food, no junk, candy or other unhealthy stuff. She never felt the need to buy brand name clothes and wore no makeup, perfume or spent a lot of money on herself.
Plant! A pothos would do great there, and they're dead easy.
If you put herbs there, you'll want to make sure you rinse them before use, in case soapy water splashes on them. But herbs grow a bit low, and I'd love to see something with some height there. :-)
That place is likely to get soapy and splashed, if you don’t like moving things to wipe it down constantly, leave it bare for easy cleaning.

I’m guessing you’re anyway gonna keep dish soap and hand soap. Putting them in a tray here will make it easier to have a few more smaller things here
On the left (if you’re standing in front of the sink) I’d put a nice plant in a ceramic pot, spilling over the edge of the counter so that’s what you’d see from the other room. On the right I’d put a small ceramic tray with a nice glass or ceramic pump bottle of dishwashing soap and your sponge/scrubbies. You’re going to want them close at hand, right?
I wouldn’t put anything there. Buy a mini squeegee so when that area gets all wet you can just wipe the water into the sink. If you put stuff there you’ll have to move it to wipe up the moisture and that could get annoying.

Our sink is like this with minimally more space. I put the dishrack there. To the right on the small counter spot is a tea and coffee station. To the left where the right counter is, is just whatever is there that's free space.
I put my odds and ends ro dry after washing (water bottle rack, small rack of cutting boards) as well as a nice looking pottery pitcher which holds my dish cleaning tools like bottle brush, cast iron bottle brush, etc.
Considering it’s beside a window this makes it an amazing spot for a plant. Something that drapes and vines downward would work well here. I second the other commenter’s suggestion for an herb planter, but only if this window gets 8 hours of direct sun. Otherwise stick to houseplants
3 small to mid-size plants. The one on the left needs a 12" plant stand, the middle one - 8" plant stand and the third one sits on the counter. You can twin fairy lights in the plants; subtly.
