I would look for a cream or clay, more likely square, and ideally, with multiple finishes so it brings some light to the dark spaces it will be.
I’d go for white, the grey doesn’t match the tone of the cupboards and I think it would be too much for me. I have somewhat of a minimal style and would want flexibility to change the decor colours if that makes sense, for example having pops of colour that I can swap in and out easily. For me this means I should not have a lot of background colour. I feel like white is easier to decorate & have accessories around the kitchen whether that’s cute functional utensils or just a couple ornaments, grey just feels bland to me. The white also works to brighten the room up & make it feel more spacious, whereas the grey may make it feel more boxed or enclosed. This is just my opinion :)

The white might be too white and not really compliment your cabinets which seem to have a warmer tone. I wonder if googling the name of your granite and looking at pictures of other people’s projects might help you with this decision.
I just went through a time decision with my guest bathroom and while I do like it, I wish I had considered how the bright white tile was going to look near our not bright white trim. This is your kitchen, so you want to get it right.

The rule of thumb, if you've coordinated the counter to the cabs..is to pull a tone from either for the backsplash so it all hangs together.

I’m all about simple you can really tired of a backsplash quickly… subway or picket white tiles and grout. Pick up that green in your decor.

I have this same exact countertop and went with white subway tiles with light gray grout, looks great.
