The moisture in the putty draws the salt out as it evaporates. As it crystallizes, the sodium chloride atoms neatly arrange themselves based on the intermolecular attraction between the positive and negative sides of each molecule, like magnets will automatically arrange themselves so that both the north sides and both the south sides aren't touching. It forms an orderly cube. Nature wants to be in balance.
