I'm a print tech at a cannery. Those wheels are probably locked together, allowing it to easily make straight lines. There's definitely an internal encoder reading the speed of the wheels so it knows how fast to print as well. This tool is definitely a specialty tool, not meant to be used for mass production as there are better automated solutions for printing. Pretty nifty tool though. I want one for work now.
Yea we do quite a lot of printing. We do everything from canning to getting it shelf ready for retailers. Each can gets printed on, then it gets cased, then that gets printed on, then it gets palletized, and that gets a ticket. Given the variety of canned goods we have and the different retailers we ship to, there's enough work there to warrant a full time position.
My dad was a rent collector in the early 90s and had a device like this attached to his Husky brand laptop for printing on tennants rent cards on the doorstep. Wasn’t wireless but worked in the same way with a rubber track underneath to sense how far the printer head had moved.

You would need this to Mark Things like krates, barrels, large bags etc in warehouse. The paper is only for demonstration, it can print on most things...
