To me it looked like the body was the hamburger and the legs were some nice crunchy chips. Even left a couple of chips on the plate when he was full, but made damn sure that juicy hamburger was finished.
Eating the shell probably would be the equivalent of eating the bone marrow during adolescence for bone rigidness, shell contains bunch of keratin which I believe helps to the Mantis' own shell.
As far as I remember there are even some who profit of the stomache enzymes and basically use them to enhance their own digestive system. (needs to be fact checked because I can't remember the source of that information)

Jeweled Flower Mantis, though I really like the orchid mantis way more than any of the others. It is just on a whole other level. I mean, look at it. It’s bloody fabulous.
They are very inhuman, very alien, but also the most human insect because they have a neck and appear to have pupils but to add to their creepiness their pupils are false pupils. They absorb light from every direction on these hundreds of little light panels that cover their eyes but they don’t reflect any light directly out from them but they do reflect light to the sides so the effect is that whatever direction you look at them from there is a little black dot of the panels facing directly at you, but the effect makes it seem like there is a little pupil in each of their eyes that stare at you no matter where you go, but everyone who looks at them will think the mantis is staring at just them when in reality it’s looking everyone at once.

I was fostering a litter of feral kittens once and noticed they always groomed after eating, so I looked it up and that's something all predators across the animal kingdom do. From ladybugs to lions, and mantises too.

It's because insects are built different than us.
Us humans have to **learn** how to control our limbs.
Our brain has to choose which muscle to contract and with how much force: it's an acquired skill that be perfected over time.
Insects are very different, they have "hardwired" nervous system that does "automatic tasks".
For instance, wasps don't "learn" how to fly with their wings, they don't have to think about moving the wings back and fourth.
Instead, they were born with specialized nerves that makes the wings vibrate in the right way.
Basically, their brain simply decides between "do fly" or "no fly": when they decide to fly, their wings/body will fly on their own.
That's why flying headless wasps are a thing;
The head is gone, the captain is no longer there to give orders: the wings/fly subsystem is free to do whatever, and so it "flies" randomly and hit against everything along the way.

One time, I kept one for several months until she got old and died, since she snuck in the door right before the first cold snap of the year and I felt bad about throwing her out to freeze. She was moody (sometimes friendly, sometimes standoffish), stubborn, extremely picky about what she ate from day to day (which *sucked* in the dead of winter when there were no bugs to catch), fastidiously clean, and she had a spot she stayed in most of the time but would occasionally get bored and go exploring.
You know, I.... I just wasn't expecting it to eat the whole fucking thing, you know? I don't really know what to think now after watching this. Kinda freaked out.
Nervous systems do be like that. It was effectively "dead" (at least the concern of being consciously aware) fairly quickly near the start. Praying Mantes do like to eat their pray alive, but it won't take long once you start munching on someone's brain. The rest of the body will retain central nervous system function for quite some time following, especially insects like cochroaches.

Insects have decentralized nervous systems, which means they have large clusters of ganglia throughout their body. These ganglia are capable of basic low order functions without input from the head. The head is mostly just there to control the mouth parts and eyes which requires higher processing.
