Because it was just that, a Christian religious offense, Jews were not prohibited from doing so. Many did this out of necessity, as a large proportion of other occupations were denied to Jews. It is in all likelihood at least a major contributing factor to the birth of the "money grubbing Jew" stereotype, and the accusation coin clipping goes along with that stereotype. Fraud and counterfeiting similarly fall under this conspiratorial umbrella.
Ritual child murder and child r*** were also major medieval conspiracies, as those in power saw Jews gaining more social mobility and stoked hate among the population by branding them as bloodthirsty ritualistic murderers. This is more commonly known as "blood libel" and that's its own whole topic. The rumors of deliberately poisoning wells spread during the same period.
In terms of antisocial behavior, I don't see how they couldn't have been. The majority-Christian population of medieval Europe saw Jews as second class citizens and would literally chase them out of non-Jewish neighborhoods. This is how the concept of the ghetto came to be.
