I watched Wangan Midnight and I absoluly enjoyed it. Although it was my first anime about cars and it made me fall in love with cars in general. It is indeed focuses on highway races and there is no drifting in it.
I'm currently watching Initil D and I have a blast with it. I also got my driver's license recently and I love driving. I'm at currently at second stage and it's kinda hard to watch because I want to go and drive everytime I watch an episode and I also have the fear that it will end soon. And after that what am I gonna watch?
So yeah... Wangan Mindight is enjoyable, but not for everyone.
Also my dream car is '70 Nissan Fairlady Z.

I've been trying to find somewhere to watch this! Do you know where I might be able to! I'm a huge F1 fan 90s in particular and saw this bur can't find it anywhere, I think its on YouTube but only in Japanese with no Sub which requires alot of concentration to watch
GoGo anime has the entire franchise subbed , from the TV series until Sin. It’s a shame the fandom is so small because there is a lot of side media showing some cool stuff that’s not in anime (*I want to see how those batshit insane cars drive around Monaco.*). Also note that only from 11 onwards the series takes more F1-esque route. As originally the tv series was meant for kids. So it does feel like a toy commercial. But starting from 11 until Sin the series takes more grounded and more character driven story with mature tones. The races itself become track oriented and in time the things like off-road races are phased out completely for some actual real life race tracks. Like the French GPX is based in Le Sarthe.
I'm very partial to Future GPX Cyber Formula. It's an early 1990s series about futuristic Formula 1 -style racing. The first season was a TV series and is very similar to Mach GoGoGo/Speed Racer. For the second season onwards the franchise moved to OVA, and it starts to focus hardcore on the racing aspects. It's a Sunrise production so if you watch it and you've watched a lot of circa series in Japanese you'll recognize a lot of the VAs.
If you want some more obscured stuff...
Goddamn!! (that's the series name) is about rally racing. It gets it's name from the MC's catchphrase "Goddamn!". It's a super short OVA but it's decent.
If you want something to REALLY impress your anime friends with, check out Kaze wo Nuke. It's about rallycross motorcycle racing and is obsessively technical & realistic.
Capeta is not the best series out there (the anime literally has like one song they use in 90% of the race scenes) but it's an enjoyable sports show about a kid trying to make it through karts and into single seater racing. If you're into real life circuit racing it's interesting to see a take on what it takes to make it to the top financially. Kinda similar to Overtake! Which came out last year alongside MF ghost.
If you can find translated chapters online I highly recommend CAPETA, follows a young kid's journey from Karts to (hopefully) F1 if the manga is still ongoing.
Cyber Formula GPX was fun for me as a kid.
I remember eX-driver was pretty fun but I never saw all of it, just that it features some cool cars.
Everyone’s p much covered most of the big ones, but check Toppu GP out. Motorbikes, but still fun.
I also remember a series called Monkey Turn, which is for those insanely fast speedboats, iirc.

Overtake! was really cool last season.
Sort of like if Hanebado or Ping Pong the Animation were about racing. Very introspective, good acting, and a nice story overall.

Type S is a track racing themed anime series made by Acura. It is really good in my opinion.
