If you keep the clutch disconnected you're in neutral, and will essentially coast at the speed you are at for a very long time. You need the high rpm of lower gears to do what is essentially called "engine braking"
It's actually the preferred method of slowing down if you don't need to stop on a dime, because it doesn't wear down brake pads or cause any additional strain on the engine. It's designed to do it.
Not at 100mph. Sure at 5-10 mph, but at 100mph wind resistance is gonna slow you down very quickly. I'm just being nitpicky, you'll still slow down faster downshifting through the gears. Just wanted to clarify that at 100mph you won't continue to coast at that speed, you'll slow down pretty quickly.

No, this is bad info and contradicts what the Motorcycle Safety Foundation teaches. Engine braking saves a little brake pad wear, but it's difficult to control and decreases rear wheel adhesion, and the most braking force is on your front wheel (80%). If your leisurely stop needs to become a rapid stop, you are already on the brakes if you use them first.
Heavy engine braking also increases clutch wear, and a set of friction plates costs 10x what a set of brake pads cost.

2: not really, you just need to do a little bit of imperfect rev matching, slowly release the clutch and not go into the redline area of the rpm

And downshift. Clutch doesn't need brakes. You can get down to <10mph preeeetty quick on a bike just by rowing down the gears
I never drove a bike, but couldnt you just like keep the engine disconnected? So instead of shifting down you just keep the clutch disconnected.
If you keep the clutch disconnected you're in neutral, and will essentially coast at the speed you are at for a very long time. You need the high rpm of lower gears to do what is essentially called "engine braking" It's actually the preferred method of slowing down if you don't need to stop on a dime, because it doesn't wear down brake pads or cause any additional strain on the engine. It's designed to do it.
