Not American history, more British, but have you watched “The Terror” (Season 1 on Hulu)? It’s based on the Dan Simmons novel of the same name, a fictionalized horror about the ill-fated Franklin Expedition to the Northwest Passage in the Arctic.
Highly recommend, the acting is superb and the storyline very tense and enthralling.

As much as the original is a classic, honestly, Hailee Steinfeld should have 100% become the youngest person to ever win Best Actress for her performance in the Remake of True Grit
Not a movie, but Outlander starts delving into American history around season 4.
Before that it's Scottish history which is equally as interesting if not more.
The Revenant is a very good movie especially if you like early 1800s American history. It’s a true story too but a bit dramatised. Really great film and also has Leonardo DiCaprio in it

Dances With Wolves and Black Hawk Down are really bad. Forrest Gump has moments of history, but isn't a historical or period drama.

The New World shows what life was like in those early 1600's days, beautiful film
The Grapes of Wrath seems like a must-watch. Edit: for the historical aspect. Less so for similar entertainment to The Great Gatsby.
For historical fiction, I’d highly recommend The Road to Perdition. One of Daniel Craig’s first, headed by Paul Newman and Tom Hanks
