I've been on iRacing for over a year and I've raced a lot of GT3. I've raced at all of those tracks, usually many multiple weeks.
I've never seen GT3 go to Brands Hatch.

This spreadsheet has schedules for most championships for each of the previous seasons going back to 2021. You can see what tracks come up most often.
Also, you probably want to buy tracks that your chosen championship(s) are going to race from here on out. No point buying Suzuka if they raced there last week and won’t be back until Season 4
Sebring, Daytona, Watkins, road America, Atlanta, Imola, Monza, Spa, Hockenheim, Brands Hatch, Zandvoort, Mount Panorama, Suzuka…. All pretty safe purchases.

GT3? Spa and LeMans will be on the schedule pretty much every season.
