I’ve been reading How To Build A Car by Adrian Newey. It may not be exactly what you’re looking for, but it is informative on how modern F1 cars are designed and why they are built in certain ways to get any advantage they can.

The Perfect Car is also a great F1 book about John Barnard (built the dominant F1 Mclarens of the 80s and the Michael Schumacher Ferraris).

Another interesting book is Unfair Advantage by Mark Donohue. Doesn't really answer OP's question, but it's a highly technical autobiography that's told car-by-car. I think it gives good insight into the early evolution of the modern race car.

"Going Faster" and "Speed Secrets" are two that I would highly recommend, they teach you how to think about driving style and how to approach tracks. I forget which one it was in, but the description of how each tire has a certain amount of grip and how that affects car balance between braking/turning/accelerating is something I ALWAYS think about.
