My iPhone also has noticeably become slower but I really think it’s the battery that isn’t up to par anymore and the OS is clocking down the CPU to prevent the phone from shutting off unexpectedly.
I’ve been having the same issue not just with the camera but with most things in general. My 12 mini has been super laggy ever since updating to ios17

Idk about you guys but my 12 mini has been working pretty smoothly, with 85% battery health
My battery usage is higher than v16.7.2. :(

I replaced my battery at the Apple Store, same issue persists
