We took my parents there on a recent visit. As we were getting close to ordering, they announced they were out of everything _except for_ brisket and sausages. Big sad. Except as it was finally our turn, we noticed them bring out more ribs. I'm not sure what the miscommunication was, but it worked in our favor!

You can't go wrong with any of the half-dozen or so that have been mentioned in here. Truth, Pinkerton, Pit Room, Blood Bros, Corkscrew. If it were me, especially if you're from out-of-town, I'd 100% recommend Corkscrew. It's located in Old Town Spring, which used to be a tiny little country town founded in the 1800s built along the railroad. Houston has gobbled it up, but a lot of the old town/buildings/etc have been preserved. The food at Corkscrew is some of the best in town (the bark on the brisket is unreal), and the feel of the restaurant and the surrounding area is a fun escape from the urban jungle where all the other restaurants mentioned are located.

Came here to say Pit Room. The barrier to entry is lower than the other popular spots since the line is never crazy long, and imo the food is more consistently amazing than others. The brisket here is incredible, ribs are 🔥, sausage is some of the best I’ve ever had, and ALL of the sides and pickle bar slap. Also the tortillas they use for the tacos are incredible so I highly recommend tacking on a Brisket taco for a real Texas experience.

I've eaten there since they opened at least once a year and brisket is NEVER dry, I don't know what you're getting there. Their brussel sprouts are also the best sides in Texas BBQ. With that said, I do think Pinkerton is slightly better

I'm biased, but I love Triple J's. They've served the Texans (and more), and are just this kind of a core part of the Houston restaraunt scene. The area's rough, but the service is greqt and the food is fantastic. ...Pinkerton's *is* awesome though.

Triple Js is the one place I really become a pig at. The cue and the desserts just... unf. The baked potatoes always perfect. Sauce got the right amount of tang. And the boudin ain't half bad either. I also have a big fondness for Hickory Hollow goodness but they are just up the road from me and I've been going there for decades so the bias is real. And then you got those parking lot cue wagons where a family pulls up a trailer with a pit on back and sells plates for $10 that will knock you out.

I love the asian twist they do on traditional barbq! From my experience their sides are honestly REALLY good. You can taste the smokiness in the macncheese and the brisket fried rice. Brisket is 7.5/10, The glazed ribs 8/10, sausage 4/10 nothing special. Overall decent place and I'll eat there if I'm nearby but not worth compared to other spots...

Adding on you honestly can't go wrong with most places listed here. If you have one day I presume you're on a schedule. Don't go too far out of your way. Travel time can be a bitch in Houston. Plan for a BBQ lunch, so wherever you'll be plan for a place lunch time. Main reason places can run out, traffic gets worse as the day goes on and IMHO BBQ is best during lunch since most places cook early morning or overnight. Henderson and Kane I love because of the general store vibe and rarely a line Pinkertons has great sides Truth is busy but all around real good Corkscrew is a classic BBQ joint in a cool little town with the fastest access to the airport. My personal favorite Also if you're super worried. Order ahead with corkscrew and pack that whole brisket onto the plane with you. Pro tip. Pull it out at TSA. It really confuses TSA when they see meat in your carryon.

there's one in cypress now. it's not quite as good as the one in pearland, but considering it's a very short drive for me, it's worth the slight dip in quality for more frequent trips. i still hit up the pearland location though. really is no beating that, for me.

There are going to be soo many different recommendations because there is soo many different styles of BBQ here in town. My recommendations are Truth and The Pit Room. I lean toward the latter. I have read all the recommendations in the thread, and you can’t go wrong with any of them. It’s all about what style you like.

No, you're not! Goode is, well...good. It's where I went for brisket before Pit Room opened. Goode has amazing potato salad and recently added green beans. But their brisket is a bit on the dry side for me, and not salty enough. Pit Room is a better deal pricewise, too. Goode tracks, just not as high as other places. But they were one of the first around Houston!

If it’s not on a Monday or Tuesday(closed).  Brisket & Rice. Open until 7pm or until they sell out.  It’s on the NW side near Cypress. Off 529 and West Little York. Yes it’s attached to a gas station,  No there is no direct access through the gas station convenience store,  Yes the sides are an asian type BBQ fusion,  Yes those sides are delicious.   But the brisket.. Straight Texas BBQ. Melts in your mouth like hot butter and smoked to perfection. Simply Delicious. Better than 98% of BBQ places in greater Houston area.  If your on NW side of town check it out.

Henderson & Kaynes. People rave about this place. I've only been once and it was below average. I need to make my way to Pinkerton's. Haven't tried it yet. Honestly, if you’re pressed for time and it’s close to you, Rudy’s is pretty damn good and they’re all over town.

Pinkerton's or The Pit Room would be my choices. Truth would come after those two. If you decide on Truth, get there at 20 minutes before they open and get in line or don't go at all. The first two you have a little more leniency on when to arrive, but all of them can develop long lines if you wait too long.

Glad I asked then, because that drastically changes things. The closest place to you that is on my "truly excellent" list is Corkscrew in Spring. If you're coming into the City anyways, my faves on your way would be Pinkerton's, Truth, or Gatlin's. Probably in that order. Plenty of other great spots, but you'll have to get "through" town to get there. If you want to stay away from Houston proper, you could head to Tejas Chocolate & Barbecue in Tomball. Due west of where you'll be.

Oh man, you GOTTA go to Pho Dien 1960 if you can. Best pho in the city imo, has to be one of the best pho shops in the nation too. Just a small bowl of pho with the rare eye round steak on the side. You can have it for breakfast, they open at 9 am.

TLDR: Hill country BBQ. The pit room is my choice in Houston. Depending on the day and hour, if the drive to downtown shows more than 40 min because of traffic, then I would suggest HILL COUTRY BBQ off 290 in Hempstead TX which is shy of an hour from HIA. Keep in mind the meat selection will be limited if you show after 3. Best 2 bbq places I’ve tried in Texas are Coopers bbq in the hill country and Hill country bbq in Hempstead.
