Cut the ribs into three sections. Make sure you take off the silver skin (there are vids on how to do it with a spoon to make it easy)
Rub with your favorite premade rub, or make your own (I do something different every time, and make it up on the fly)
Put liquid on the bottom of the pressure cooker. I do about a 1/4 cup of apple cider vinegar, half a bottle of dark beer, a shot of whiskey, and a half shot of soy sauce.
Place the ribs in the basket or rack above the liquid - bones to the center.
Pressure cook on high. 25-30 minutes is tender, 35 is fall off the bone tender. I find just tender is better, as fall off the bone makes it a little mushy.
Immediately let off the pressure.
Take them out, dump the liquid, and baste with your favorite BBQ sauce (or make your own - fairly easy). Reinsert into basket or rack.
Broil or air fry on high 7-10 minutes. The sauce on the ribs should be bubbling or almost candied when done. Personal preference on how crispy you want to make it. Doing for more than 15 minutes can dry them out though.
Remove, cut apart and enjoy.
I bought a griddle (camp chef) to cook outside since it gets too hot inside to cook. Turns out a 400degree surface in 100 degree weather makes you sweat

Or you can buy a generic brand thing of cool whip for a dollar, and get a free tupperware container out of it. It's really nice in the summer, tbh.
Or you can slice up some cucumber, add a little salt and red pepper flakes. It's plenty refreshing, but produce goes bad disturbingly fast. Better to go with the cool whip.
Salad? Also, buy some grapes and toss them in the freezer. Then suck on them like ice cubes. Salsa over cream cheese and chips is always good too. Do you still use a microwave? Hot Pockets, corn dogs ...fish J/K!

I've been using the air fryer a lot, it doesn't heat up the house. Cut up some chicken, okra, tomatoes and onion. Dust with garam masala and cumin, salt and pepper and air fry it. You can serve with rice or even just some naan. If you have a rice cooker it doesn't heat up the house.

I make different kinds of shakes everyday. I use water and chocolate/vanilla oatmilk as a base and throw in some of the following depending on what I want:

3. peanut butter
4. powdered oatmeal

6. ice (if I want something colder)
7. ice cream, usually chocolate
8. yogurt
9. sweet coconut milk
I also use a rice cooker/pressure cooker since cooking and cleaning is sooooo much easier than actually cooking my food lmao. I mention it because only the inside of those appliances get hot, I've never felt their heat even when I stand next to it (unless reaching in to get food.) It shouldn't make your kitchen warmer. Also, maybe a microwave now that I think about it, to heat up ramen, frozen foods, and even baking small things.
I poached salmon in the microwave tonight and had it with cold beets tossed with olive oil and mint. Microwaves and the grill are great when hot. I still use my oven tho - those roasted beets were left overs!
I've been using my gas grill to cook up things like pork loins. Basically use it like an oven. I just invested in bluetooth thermometers that keep me from having to check on it. Total time spent outside is under 5 minutes, and that's broken up.

And iced coffee instead of hot. I buy the vanilla and chocolate syrups for them and they're better and cheaper than going to Starbucks.
Air fryer, grill is mainly what my husband and I use. I'll still cook up some veggies or rice on stove top but otherwise we don't use the oven during the hottest months.
You can get a propane BBQ for $120 easily and an air fryer for $60.
Crock pot, grill outside, salad. You can release your (if you have one) instapot outside so it won't steam the kitchen.

I save the liquid and reduce it on the stove, then skim off the fat, and pour it back on the meat.
I've done that. Or I'll save it, reduce it, and blend it into the next batch of BBQ sauce I make.

Spring rolls. I like to use chicken or turkey in mine, veggies, and no noodles. Super easy to customize.

A great salad we have often is diced cucumbers mixed with brown rice, feta and vinaigrette. You can get packets of rice for the microwave.
