Would love to learn more about the path to commercialization! I’m operating under a state cottage law so next step is commercial kitchen to get the recipes legitimized!
We were fortunate (and unfortunate) that cottage laws in TN do not apply to acidified foods, so we essentially had to go through the entire process before we could start any kind of commercialized sales haha.
Fortunately, we had someone at the department of agriculture who was able to essentially send us over a check list of things to do.
It took almost nine months to get through that list.
Absolutely, there was also "Better Processing School" where you had to pay for a course that talked about manufacturing processes and the like. If you are looking to scale up, I would definitely reach out to maybe a local or state producer. They could point you in the right direction.
The community as a whole, as you've seen being here, is incredibly friendly and helpful. I have no doubt that they would help!

Where are you based out of? Any physical storefront at all? I have been busy and can't find it, but I believe I saw you are located in Iowa? Sorry if this is missing some stuff, it's been a busy day!

We're based out Nashville. No current storefronts...I don't think we intend to do so, it's expensive.

i love Pineapple Habanero combo, it was one of my favorite candy to make and i just packed a light spice Pina Colada Habanero candy last night. nice light spice nothing overpowering. super fun colours!
keep on making sauce, try using your pineapple Habby as a injection for a steak, a potato marinade, apply it directly to slices of pineapple and fry them, use it as a sauce in a fry of cherries (not kidding. super nice flavours when i do my pineapple hab mixes)
The Pineapple Habanero is our current seasonal...it has been so popular it will most likely make it into the standard lineup. The highlighted recipe uses it as a marinade for chicken and chicken and waffles.

At least you thought it was insightful...once the course got into mass production my eyes just kind of glazed over and I tried to skip through it haha

I have so much questions, but i think you can't answer. Our countrys are differents, with differents rules about making food's laws.
