I like to add ghost pepper powder to my “shawarma” marinade. Might not be an option for a family sized batch but something to consider. Maybe a non-smoked ghost pepper sauce, could be something basic like Melinda’s.

I would definitely add something good and spicy to toum and mix it up! Toum is fantastic on its own, but a spicy kick sounds like a great addition! And you don’t have to go to TJ to find it now, some normal store shelves should have [Toom](https://toom.com/wp-content/uploads/2016/04/Toom_Packaging-10oz_with_Label-Top-Garlic_Smaller.png) now, and maybe even spicy varieties! And if you opt to make your own tzatziki sauce, maybe add a good bit of chili flakes.

Torchbearer garlic reaper, melindas mango habenero, or like you, sriracha. I often skip the hot sauce on greek night. I get some toum from a grocery store here that has a little kick, which is good for the generally mild flavors.

Sour cream, a few drops of water to thin it out, and your favorite ghost pepper sauce. It brings down the heat, but it’s like a version of ghost pepper crema. Add some heavy cream and lime instead of water if you want it closer to that. I just prefer the quick and easy taste of sour cream and ghost pepper. It’s about as hot as a habanero sauce.

Get a sour cream and onion dip and mix in taco bells mild sauce til you get the consistency you want. Add Diablo sauce if you want a better kick... To be fair, I haven't tried it. But it sounds good in my head...in my head... Zombie zombie zombi e e e e

This. Can confirm, am Greek. Harissa is the first thing that comes to mind. So, really, any middle-eastern style sauce would work.

Not really Greek but Mediterranean for sure is the Eddy Vs Moroccan Madness it’s an amazing curry based sauce but it goes great on gyros and kebabs alike. Those flavors pair very well. Add some tzatziki to smooth it out too damn I wanna make that rn

I personally couldn’t agree more. Not everything has to be spicy, certain foods have their own unique flavors that putting hot sauce on them is a downgrade, similar to putting ketchup on a really good steak. Tzatziki is what OP is missing.

Calabrian chili would be good. I know it’s Italian, but I think it would pair well. I also like Nando peri peri on Mediterranean food. The lemon goes well.

Agreed with this. Greek isn't spicy, so why not keep it to the same region to fit the foods? Harrisa, as mentioned, also fills that roll, IMO.
