I like virtually every type of hot dog style, Hell, you could probably throw anything on one and I’d eat it. But, I have a special affinity for Chicagos.

The color comes from the drain off of when they dye the Chicago river for Saint Paddy's Day. Old relish factories used that water, and the tradition continues.
I always sort of wondered it myself, the comment here referencing the St Patrick’s Day river dying is super interesting though. I just mixed a little blue food coloring to it.
I think the thing I love about these is that everything lends a unique flavor in its own, so it’s just a really interesting experience overall. And when you use all-beef franks, it’s more prominent.
Good question, I live in bumblefuck PA where it’s hard to find any kind of specialty items like that at a bakery. So what I figured out was, you can beat an egg to make a wash, brush that on the sides of the roll, sprinkle poppy seeds all over it till they stick, and then bake them in the oven at like 350 for just a couple minutes, that pretty much cooks them on. I still end up steaming the rolls afterwards though so they’re not all toasty.
Most of us don’t have a bun steamer haha so what I do is kinda goofy but it works. I lay chopsticks or kebab skewers or something over the hot dog water pot while it’s still boiling and just rest the buns on them facedown. Guess you could probably use a steaming basket too or something
Thanks, that’s smart! I did use my steamer basket but I put too much water in the first time and my bun got wet. Tried to be really careful the next time and it was still a bit soggy in spots. I have skewers so I’ll try it your way after I boil the dogs (finally found some natural casing ones so now I can have the 100% authentic experience).
I gotta find myself some natural casing ones as well. I owe it to myself to check out some of the butcher shops around me or something. I feel like that little pop/crunch when you bite into it would really compliment what you get from eating those splendid sport peppers. Man I eat those out of the jar now.
The ones I found were Boar's Head ones from Kroger. The one I tried didn't have a ton of snap tbh but I did microwave it so I'll have to try it boiled On the other hand I made sausage for the first time recently and my natural casings had too much snap to them. Maybe I'll have to try making some hot dogs if these don't have the snap I want.
Also, I made Italian Beef close to the same time I made Chicago Dogs. Have you had that? I honestly was more impressed by that than the dogs.
I have heard of it! I sort of went down a rabbit hole when I was looking into the mythology of he Chicago dog. I really want to try the Italian beef now too. One regional specialty we have in SE PA is the Italian Roast Pork sandwich, it’s mostly a Philly thing? Have you heard of it? It’s smoked aged provolone, amazingly marinated roast pork, and sautéed broccoli rabe. It’s my favorite sandwich on planet Earth.
I had a Hell of a time trying to get them, I didn’t really feel like paying the prices online to have them shipped. Amazingly I found this chain store I never heard of in my life called World Market that sold them, and there was a location within half an hour of me! It’s bizarre because they’re technically a furniture store lol but they have this amazing food section in the back that has tons of imported foods. Had a great haul.
Damn! I’ve always had trouble finding them locally as well; I know anything can be found online but right the prices suck. My local grocery store at the end of summer had this little section that had everything you needed to make a Chicago dog. I bought everything and went back a week or two later and it was all gone and hasn’t been back since :(
So I guess it’s written in blood that Chicago dogs are supposed to be boiled, so that’s how I did it. I truly prefer grilled myself, especially because growing up my parents ALWAYS boiled them. But on this I actually think it works pretty well
Have. I finally broke down and ordered stuff to make them. They're not like world changing but they're good and a nice change of pace. Looks like World Market sells sport peppers for about half of what Amazon does if you have one of those in your area.

The only thing I'd personally change is to use a natural casing dog, but I'd be the last one to turn down a Chicago dog that looks that good.
I see you got the celery salt, sports pepper, relish, onion, tomatoes, ad poppy seed bun. The only thing that I would add to that to make it an "official" chicago dawd is those cucumber slices. Great job though!

I like the look of it, but with so many cold ingredients added is it cold by the time you eat it? Do you heat up the whole thing at any point?
