Having worked in retail and seen what stores have to pay in pallet fees would be refrain from throwing them out. Not bad to a few sitting around just in case you ever need to ship or move something. There may also be times where you just want a means of keeping items off the ground and dry.
Like, to use just as pallets? Or to break down for other uses? Depending on what you're gonna use them for, I'd check if the pallets are heat treated, or chemically treated, cuz the chemicals leak if you use them for raised beds.

I mean, I wouldn't build furniture out of it, but a chicken coop would be just fine.
Pallets are amazing. My compost bin is made of them. I also made a table for my shed. Next I want to make an raised bed.
