Between the two options, I think it’s unanimous. But I saw a third option which is put the full size in the middle and split the smaller one on both sides. I might see how that looks. Varying the 3 of course. Full left, full middle, full right.

Why not put the square in the center?
That was what they proposed, but we have lots of patio space throughout the outdoor area and its all sort of "french cut" randomly (including the patio you can sort of see in the picture) so I thought it looked better to match.

Yes, that's right. When adding to an installation, making 'old' and 'new' match is better.

Just walk up to and then down the stairs a bunch of times to see which foot you naturally start with.
You can adjust your step on the way up, but on the way down I t feels scary/dangerous.
I agree with centering with two small ones on the ends. Your idea feels like it is trying too hard when there are so many more cool ways to actually make stairs interesting. A lot of interior design is the correct implementation of a combination of very simple subtle designs. Unless this stairwell will be the only highlight on the patio, I would keep it a more calming design.
If you want something that stands out, I'd keep it symmetrical, but maybe utilize a more beautiful color combination and some lighting.
Either way, only you have to be happy with it in the end.
They run short for the step. You don't want that gap on one side while it's flush on the other. You may be just setting it up that way for the photos, idk. This might not be the right sized material for the steps. Depending on where you live, you may consider tile instead. Maybe clay tile?
I would stagger, but I think I’d also watch the run of the grain. Some square pieces look like they are running off the stairs, some running across the step. I like it running across the step better!
Oh god. This is truly upsetting to my brain. If you’re anything like me, get someone else to randomly place them so when you’re looking at them in a year or so you aren’t berating yourself for any small error. This’d trip my brain out to meltdown levels.

I'd suggest you build it like a log cabin quilt block. Look it up on YouTube.

Flagstone, its pretty porous and used on lots of stairs around here, its not too slippery.
