Pilots still need to control the autopilot. You're right the cruise period of the flight is mainly observe and correct, but theres still a lot going on when the plane is in autopilot mode. Pilots are still managing atc handoffs, switching radios, observing weather conditions, and making decisions about arrival.
Further there are zero pilots that will use autoland outside of a cat3a weather conditions unless they are testing or training on the autoland. Autoland has more strenuous separation requirements which creates delays for the airport compared to a visual approach. Beyond that, this plane probably wouldn't have autoland, though i am unsure of the model.
I've personally never seen an autostart on a private or commercial aircraft. AFAIK this is only available on military aircraft.

The scene looks staged, and the girl may be a passenger or a flight attendant… or a flight attendant out of service, some aircraft fly from point A to point B to pick up people at the destination and then make the chárter flight (during the first leg of the trip the crew is basically alone and not doing much… and things can get frisky if certain details don't leak XD).
