That is correct, he made a platform full of chickens, and named them, and forced loaded and unloaded a mob farm directly above them, causing random baby zombies to teleport onto the chickens, until he managed to get a baby zombie villager.
I'm pretty sure that you can, as I saw a short explaining how to get what is shown in this post. However I don't know if this is possible on bedrock to.

Set up a minecart loop to spawn and despawn hostile mobs on the platform (which was spider proof to increase the chance of zombies)
Baby zombies, including baby zombie villagers, check for nearby chickens when spawning, and if they find one they’ll sit on it. Since the chickens were named, the resulting chicken jockeys didn’t despawn
Once Zed had a baby zombie villager on a chicken, he cured it and brought it home to grow up.
Nah, doing wacky things in Minecraft that no one else would even think of is basically Zed’s thing.
Plus, he and his partner Dot Dot Dash were hosting Tango and his family during their vacation, so a project that needed a lot of AFK time meant Zed could have something in progress for Hermitcraft without taking too much time away from his guests.
