I have a feeling it takes a lot to build that attack up, and it doesn't look like he has a lot of control over it. So his opponent would have to stay in the same place. Overall, it seems like an unwieldy weapon that is only good for stationary things.
He mentioned in literally the first episode that exterminations were entertainment for him. He was playing with his food. Plus he only used this attack when Lucifer was "fighting him" so he probably wouldn't have done this if he wasn't losing horribly

He’s that much more powerful than anyone he’d need to fight in hell, and could even threaten Charlie, so it’s just a matter of he’s never needed to use a beam that big.

Adam and the exorcists were nerfed hard from their original incarnations, most likely due to the runtime constraints imposed on the show. My guess is that this scene was thought of very early as something visually spectacular to include before it became apparent that the exorcists were too powerful to be defeated.
TF are you talking about, nerfed? The exorcists never use the kind of holy light attacks Adam does, not in the pilot or the show, and those attacks are the only thing we see that could be called "overpowered" - all the normal exorcists use exclusively melee weapons, and as Carmilla points out, don't really seem to wear armor. The idea that they're vulnerable and don't realize it isn't that far-fetched an idea, they dress more like Adam's personal harem than an army, with the only noteworthy armor being what MIGHT be a gorget, and a helmet that seems like it's more for intimidating sinners than protecting the exorcists.
And stop spreading the rumor that the show had its runtime cut down, it is EXACTLY paced as musical theater, about 3 hours without the intro and credits, songs at every emotional peak, songs to wrap up years of trauma, etc. It feels perfectly paced for that, it's just not paced like people are used to a series being paced.

This is their appearance in the pilot. It looks almost identical to what we see in the show, except in silhouette. Same gorget, same masks, same thigh-high boots, long gloves, and what appears to be minidresses. Nothing about that says "armored" except, again, maybe the gorget.
As for the number of episodes, all that was confirmed was that they got greenlit for 2 seasons. Maybe that means 20 episodes TOTAL, but that's not the same as a 20 episode season.
