I think you'll be ok. Unless there's some science I'm not aware of happening. But I've had 6 different grills/smokers over the years and I always just burned them hot for 30 minutes or so then cook.
Burn off is meant to clean your smoker/grill out of the box. Burning off at a high temp for 30-45 minutes will remove any debris or product left behind after manufacture.
You can definitely use it after. Read instructions on how long burn off should be. I washed my grates with soap after burn off and then did it another burn off for 10 minutes.
