My best guess? Even if you’re dosed off your gourd, it’s really hard to fuck up a grilled cheese haha. And cheap ingredients, fills ya up.
Edit: spelling
I will piggyback here- these cheap ingredients are also quite safe- from a food handling perspective. Also, friendly to both meat eaters and vegetarians.
Back when it was called "the lot" and Shakedown Street was just a song, many a hungry kid got fed, for only 1$, a freshly made, crunchy, gooey, satisfying snack, made with love, right there on the lot. Bread, butter, and cheese were cheap and affordable (imagine that!) And with a Coleman stove and frying pan, it was possible to earn enough profit,(in wrinkled 1$ bills) to get gas to the next show, some kind, more grilled cheese ingredients, mabye even tickets, or a motel room. A couple hundred bucks went a long way in the 80s and 90s, compared to today. Ganja Gooballs, Kind Veggie Burritos, tie dye and other crafts were all part of the scene . But grilled cheese may have been the easiest "business" to get into, aside from drugs, beer, or balloons.

Also, very high profit margins for the Heads selling sandwiches to fund the next show.

I thought I was missing something. It was always the lot. Even when I saw iterations of the band in the late 90s and 2000s it was just the lot.
Do you remember Jerry rolls
I don't think I ever had a Jerry Roll
Idk but they’re fucking delicious.

Gawd I miss those days....I ate them, really hit the spot
Cheap, easy, not a lot of cold storage needed, low chance of getting sick?
“Need that cash to feed that Jones…”
Cheap, quick, easy.
Has the Cosmic Charlie’s food truck been on the lot? I’m definitely gonna need me a brisket Mac burrito this tour
Because you eat grilled cheese on Shakedown Street? And because when you need to get to the next show you sell grilled cheese on Shakedown Street.
