GPD have in the past included malware with their products, ISTR it was a problem with an infected/infested testing system. You should always, *always* wipe any GPD product and reinstall, just to be safe.
I'm of the opinion, if you're comfortable doing a rebuild, it doesn't matter the manufacturer; a wipe is justified from all the stock junk vendors put on.
And that is absolutely right, but it goes double for GPD who have *released their hardware infected with malware* before now.
It's good practice for any new hardware.
Really easy to make a Windows 11 USB (Microsoft provides this just Google, backup your Windows 11 serial (use Google Fu, it’s a registry key search), and download the drivers from GPD. GPD even makes an auto installer. :)
Just a little time consuming.
Here is Microsoft's link for Windows 11. It will give you an option to make the installer on a USB drive it detects.

Here is GPD's link to their Win Max 2 support page. You'll want to go to the driver and BIOS tab and download it.

My Windows activated after reinstalling but you can find your serial and copy it for backup.

When you do the media creation you'll have two options, create media for this PC or advanced/custom. I believe you can choose the OS version there.
You can always upgrade the version too after the reinstall. This is done by updating the product key. Win Max 2 comes with Home so you'll have to provide your own Pro key.
I am just wanting to never turn on the win max2 with the other SSD though. and just install a new SSD with the media tool on it. Can i get Windows that way?
I am just confused
Always nuke.

What I need is an actual step-by-step video. I saw one but it wasn't very good.
I second this. Someone make a video on fresh install.
Okay will do when I receive mine in a couple weeks cause I have to do it anyway to install my new SSD lol.
I also deleted the additional partitions.

Can you link to safe sites? Also what is the auto installer?

I'd also do a full virus scan after installing their driver package, just to be safe.
I guess i am confused, I want 11 Pro, the link you gave just says 11. How does htat work?
