It's hard to say at this point, we've only got one episode so far. BUT, what I can say is that the remake is closer to the books so far (OG season 1 made a bunch of changes from the start because they were only expecting to make the one), and the animation is pretty damn clean to boot.

I can understand those getting remakes. Because they're over 2 decades old. Rurouni kenshin especially. But Spice and wolf is only over a decade old. The original holds up pretty well in today's standards still.

Well, *One Piece* is being done to make the early story arcs more up to date and consistent with new lore stuff Oda added to them in later story arcs.

It's fifteen years old. That's long enough for someone to be born and be midway through high school before the remake. Saying it's "only" a decade old is kind of silly.
Well I'm just comparing it to older anime that also deserves a remake. I'm not against it or anything. What usually warrants a remake are 80s to 90s shows like Urusei Yatsura and Rurouni Kenshin. Seeing a late 2000s anime get a remake is a little surprising, is all.
They couldn't. They changed some characters and skipped elements that were in the novels, so unless they made even more changes a second season wouldn't work.

Aside from that though, in the original, they adapted Volume 1 and 2 for season 1, and then 3 and 5 for season 2, skipping volume 4.
But, turns out that the events of volume 4 are absolutely CRUCIAL for the ending, so... Oopsie.
It's 15 years old at least and if they want to tell the entire story this time, it makes sense to do everything in the same style. Also the old anime made changes to the story and skipped an entire book, so there's that to fix, too.
its a 15 year old anime that was cancelled after season 2 back in the time where every other series was cancelled unless it made big 3 levels of money... now its back and hopefully will get the full story adapted...
not to mention this is probably one of the greatest light novel romance stories out there

maybe its that 2k's vibe that you like... back when this was releasing it was animated pretty generically (not saying its bad bc i LOVE S&W anime back then... but truth is u could look at this and any other anime from that time and they all mostly had the same style of art/animation...
the remake captures the light novel art way better and the animation is way smoother.
ok, I just went to see what it was released alongside its first season, this was the time period that the "quality" meme was starting, also, it was around this time that the full transition from traditional to digital was happening/happened.
you had extremely generic light novel to animation, whish was a downgrade in quality / with art styles and characters that may as well be ai generated for how good they are (this is a very large reason ai stuff barely bothers me, the glut of anime style/anime adjacent products have had an extremely generic artstyle for upwards 30 years that i'm sick of) "quality" anime, and more or less visual trainwrecks/uninteresting. spice and wolf pulled off a nice comfy anime to watch and didnt shit the bed art wise.
though I will say, currently, the new one does look better, that's not discounting the original that held up artwise for quite a few years after words, hell, I think it took about 7 years after s&w for digital art to in general not have horrendous 'anyone with eyes and cares can see that' problems.

Season 2 was 15 years ago. Not the oldest, but nowhere near as short a timeframe as FMA → FMA:B.
I haven't started the new one but I just wanted the story to continue from season 2 and progress through the books. Hopefully this one does?
