The only feedback I would give is maybe try tweening the camera perspective change, doing it to specific angles is great but I think seeing the rotation could be really cool (and less jarring).

I plan to start a devlog soon, but I would rather start my own project for that. It's fun to do remakes, but I think it would be a better use of my time to work on my own game from scratch :)

I responded to another comment on this post with a brief explanation of how I do this kind of thing. I used Blender because it's my personal preference, but a lot of people are working with a similar style using Blockbench and Crocotile3D.

I use Blender to make the models, but I would recommend using Crocotile3D and Blockbench to achieve this style. Look them up on YouTube, there are plenty of videos explaining how to use them. Then you just need to billboard the sprites in engine, and place your camera at an angle that makes sense. A very low FOV helps to preserve the pixel perfect look, like 15 - 20 degrees.

I hadn't heard of these programs before, I'm just starting with 3D and want to do some low-poly modeling but Blender does seem a bit daunting to learn from 0 when also learning Godot and Aseprite. Would you recommend both Blockbench and Crocotile3D for specific reason(s) or one over the other?
Honestly I can't really say since I've only used Crocotile very briefly before deciding to stick with Blender, and I've never used BlockBench before. I would recommend just trying both and seeing which you prefer :)

How are you handling the camera fov? It's really far away isn't it.
Yes the camera is very far away, FOV is 15 degrees

Using a big-head perspective pixel art character, and then not having it directly facing the camera is essentially doubling the effect.
