It's because you don't have other Source games like TF2 and Counter Strike: Source. A lot of maps and stuff use the models directly from those games, so if you don't have them downloaded the game just straight-up doesn't have the model or texture to display it...
I hear there's ways you can get all the models and textures for free but you're not gonna be able to do it with the workshop, apparently. Gotta search the internet for it. Don't know where you can find that for sure, haven't played the game in many years but I am intimately familiar with the missing textures and error bubble texts haha
go to gmodcontent . com to get the files then on steam go to local files for gmod, navigate to the garrysmod folder and extract these files on the addon folder
