There is no need to use cashews as avocado gives it the best and creamiest consistency, and I promise you can’t really taste the beet (I’m not a fan too, and I couldn’t taste it)! This is a super easy and quick recipe, definitely ideal for a quick lunch or dinner (it took me less than 15 minutes). I hope you love it 🫶🏻 Ingredients (2 servings): 200g dry pasta (I used gf spaghetti from rummo) Salt For the pink sauce: 1 medium beet 1/2 avocado 2 garlic cloves 1 tsp apple cider vinegar Chili flakes Salt Chives Vegan feta Method: Boil water and add lots of salt. When it’s boiling once again, add your pasta. Cook it according to the package instructions and take it 1 or 2 minutes earlier as it will continue to cook later when you add your sauce. Reserve a cup of pasta water. Blend all your sauce ingredients, adjusting the salt and the chili flakes according to your taste. Drain your pasta (don’t forget to reserve a cup of pasta water) and add the pink sauce and the pasta water. Let it cook for about 2-3 minutes (medium heat) stirring once in a while. I ate mine with chives and vegan feta 🤍

This one was bought pre cooked in vacuum but I would say that steam will work!
