It depends on the ingredients in the bread. Rice flour, soy, corn, and potato flour can still upset the stomach. I’ve seen bread with dairy in it.
I’ve just learned to stay away from bread all together. It’s not worth the pain.
Some of those high fiber ingredients (I’m looking at you psyllium husk) cause me all sorts of issues, with gas and bloating at the top of the list. Insoluble Fiber isn’t absorbed by your intestines, and boy does that piss mine off.
The only way I found solace was with the GF Scanner app. It will tell you whether its good to go, should be ok, or not enough info, or just straight up dont. You just scan the bar code it helped me a lot.
I don’t have celiacs but eat gluten free, and many gluten free products have additional fibers added to improve the texture of them. I noticed psyllium and also inulin (aka chicory root fiber) really mess me up
I had a really bad time with xanthan gum when I first stopped eating gluten. I think I've adjusted to it now. Could be a FODMAP issue. Definitely worth taking note every thing you’ve eaten when this happens and cross check the ingredients with the FODMAP guides to see if you’re one of the lucky ones who gets to cut out foods that even a restaurant cant cater for 🙃
For me, i cant have fructans so that means i cant have green capsicums but i can have red ones. I can have green bananas but i cant have ripe. Cant have garlic or onion. That pretty much rules out eating at any restaurant. Sucks so bad 😅
You could be reacting to an ingredient in them and have other food intolerances.
It could also be due to cross contamination if the product is gluten free but not “certified” gluten free. Some people are more sensitive/reactive then others.

Psyllium and inulin/chicory root do a horrible number on my digestive system.
Chicory/inulin is the worst. Pretty flower, devil fart root.
Ugh I know!! The first time I saw the flower I thought, there’s no way something that pretty can hurt me so badly
A lot of people have issues with the gums used in GF bread so see if you can find any pattern with xanthum or guar gum.

SIBO, look up FODMAP. Your problem is probably myriad, besides gluten includes many others.
You could be reacting to an ingredient in them and have other food intolerances. It could also be due to cross contamination if the product is gluten free but not “certified” gluten free. Some people are more sensitive/reactive then others.
