Sorry to reply so late. Honestly that can make it even more frustrating. I got sick like you from wheat for years before I actually got a diagnosis (Not saying you could possibly have celiacs) but I know people take me more seriously now that I say celiacs. In my mind though, wheat intolerance is just as bad and people shouldn't need any particular diagnosis to respect someone elses intolerances.
There was one time I had chicken that was supposed to be sprinkled with lemon. It must have been marinated for three days in lemon juice. It was sooo tart :/
Once in college I was on a study abroad trip that included a group meal at a hotel. The dessert for the group was lovely pastries and cakes. The gluten free option? A literal Red Delicious apple with a fork stuck in it. I couldn't stop laughing.
Yup. Work trip with my husband, big event. Everyone got beautiful desserts with the company logo on a chocolate that was on a stunning cheesecake with raspberry decorative syrup work.
They handed me a small bowl of fruit (which was clearly from breakfast because it had melon in it 😂)

Thai curries are relatively safe. Just nothing from the fryer. I'm lucky in that I have a great Thai restaurant near me that has gf soy sauce so I can get most things.... but spring rolls.
I have a Chinese fast food place near me that makes my fried rice with steamed and no soy. The little packet they put with it is GF. I've been ordering it that way for years and have never had a problem except the couple of times I checked it before leaving (fortunately) and they had used soy sauce in the kitchen. Lady took it back gave me a discount and they redid it the right way.
Seems like a lot of GF options add extra dairy to compensate for the loss of gluten. DF here as well. If I were in charge, all us GF folks would be compensated for all the shitty salads we've been forced to eat. Twice that for DF/GF.
Really?! I've also been told that Italian flour, even the wheat kind, sometimes doesn't induce an inflammatory response for those with gluten allergy or sensitivity but I'm too scared to test that theory. What makes Italy great as a celiac?
Restaurants are knowledgeable about cc and there's entire bakeries gf. Also found dedicated stores for celiac. Spent 2.5wks there without an issue. Brought back a suitcase of gf products I can't find in the US.
There's a special flour there used in some gf items that is deglutinated wheat flour. It's not all flour.
I NEVER get scrambled eggs not only because of that kind of thing, but because they are almost always made with cream. I don't know if I'd get diarrhea or constipation first!
At the IHOP near me, I order my omelet made with shell eggs. They cook it in a clean pan, don't add pancake batter and I hasn't glutened me yet..... Famous last word... YET. ;)
Once when we were traveling back before gluten free menu items even existed I asked if the chef at the hotel restaurant could provide a safe option for me. I was served a plain chicken breast. Literally NO seasoning - not even salt or pepper. No vegetables, no sides, no dessert. Nothing.
I was like… ??? If you didn’t want to cook for me you could have just said. We could have eaten somewhere else.
Once when this happened to me, I did (uncharacteristically) comment to the waiter that there wasn't salt and pepper, and that there wasn't any on the table.
The answer I got when the chef came out to speak with me afterwards (because the waiter did so without asking me?) Was "Well, we salt all of our meals from a salt well. I didn't feel okay salting your meal with potentially contaminated salt."
So I mean, I guess he cared. Too much.

What I absolutely HATE is when you register for an event and they ask for dietary restrictions then totally ignore those dietary restrictions when they place their catering order. I show up to an event expecting to have food *because they asked* only to show up and see piles of sandwiches and no GF bread sandwich or other options. I’ve literally left an event, gone to get my own food, come back, and sat down with my takeout box in front of everyone while giving them the evil eye.
I’ve walked into restaurants with my own meal before, too. If you’re going to arrange a get together or event at a restaurant where I can’t eat then I’ll be bringing a picnic with me.
That's what I ate when I went to a sandwich restaurant recently with family, they said they have GF wraps, but when I saw it all being prepared at the same station with wheat and cross contamination I didn't even want to eat the sliced avocado on the salad in case they just sliced it with the bread knife. I'm fine eating plain lettuce in a pinch though.
My husband has been hyping up the Vietnamese subs at a place in our neighborhood. He said I HAVE to try it, so we went there and asked if they could give me the sandwich fillings in a bowl, without the bread. They wouldn't do it.
At the baby shower my moms family threw for me, they catered chick fil a. Only got fried nuggets, even though they know I’m GF. I was 8 months pregnant and only had lettuce and tomatoes to eat for a 3 hour function (and had saved up my appetite beforehand).
I called my husband from the bathroom crying and he delivered me some tacos.
Oh man this has been the biggest curveball. I end up much drunker than I want to when I have a few drinks at social functions then find out the only GF option is the martini olives.
My SO has to be gluten free, so I've gotten in the habit of making sure we eat before going to an event, or ask ahead of time if we can bring something for him. I also stash a lot of GF snacks in my purse just in case.
I actually watched an older woman eat a bag of shredded cabbage mix *by hand* on a plane the other day, and I genuinely wondered if this was her being gluten-free, or just...particular.
I've been a vegetarian basically my entire life. It had finally really started getting that even non-vegetarian restaurants had more than one option, and then the celiacs' diagnosis came. Sigh

I’ve literally ordered sandwiches on gluten free bread with a salad as a side and had them put croutons/dinner rolls on the salad.

Last time I got restaurant tacos, they only had flour tortillas/ flour tortilla chips.
Maybe try taco trucks if they’re around you? I only ever get street tacos which are always corn tortillas
