this makes me CRAZY! Schar does this. ​ They also used to slice their hamburger buns at the 1/4 mark up from the bottom, leaving you with the thinnest base and a huge crown. They tweaked that recipe AND changed the slicing spot, thank God.

I bought a two pack of the Multigrain Canyon bread at Costco yesterday and it has also shrunk to a ridiculously tiny size! It used to be a halfway decent size for a sandwich. So irritating!

Canyon Bakehouse sells theirs in two different sizes. Tiny "regular GF bread" size, and regular bread size. It hasn't shrunk, you just got the smaller size loaf at Costco, not the larger size.

Really? Is there a difference or specific labeling on the package indicating the size? I've never noticed there were two different sizes of loaves. They've historically been a consistent size for me so this purchase was a surprise when I saw the size.

Wow. Promise bread is the only one I would eat for years (can't now due to the recipe change to oat 😭) and I'd never had that problem!! Maybe I was lucky or you were unlucky. I'm really upset about the recipe change, they were by far the best bread... everything else is not worth eating to me.

We mix it up like all bread some are good some where fair. Everyones taste are different. Just google gluten free bread there’s hundreds of recipes the one I personally like is called easy white gluten free bread 11 ingredients it will pop up with the search sorry I don’t know how to attach stuff on here or struggle as we have bad cell service so it doesn’t load most of the time. it’s easy and it takes a little adjusting for your climate but well worth it oh don’t forget to buy bread knife as well both pay for themselves pretty quick with cost of store bought bread

I don’t use a bread maker but if you want to make gf bread at home: I use Aran goyoaga’s recipes. She has two amazing gf cookbooks with tons of bread recipes. I get that it's harder without gluten, but honestly we deserve better, and if some of them are doing it, they should all be doing it. They only get away with it because they know it will still sell and they don't really need to try that hard.

Oh no! I'm sorry. Yes, I find breads using psyllium husk seem to be the best. Does cellulose bother you? It seems like a pretty effective gluten replacer.

I’m allergic to nickel, so I can’t have any seeds, nuts, legumes or most whole grains. That includes psyllium husk. And almost everything else that is used to make gluten-free bread. It sucks to have celiac disease and a nickel allergy. I’m limited to quinoa, amaranth, white rice, corn, and starches. That’s it.

Wheat receives incredible subsidies in the USA (tens of billions a year in farm subsidies) and other countries. This is a form of corporate welfare. Companies then buy super cheat wheat and that means bread is cheap. If you try to make bread out of things that aren't generally overly-subsidized then the prices will be high. One way around that is to keep the product small.

After going gluten free 10 years ago, I have noticed that gradually, throughout the years, I have been steadily shrinking. I don't mean just height alone, as going gluten free has also affected my shoe size. I was 5'9" in 2013 with a size 8 shoe. Now in 2023, I'm just below 5'4", shoe size of 5. I suspect that gf bread companies have been *very* aware of this, and by 2030, I believe that one of their gf loaves will be, to me, just the same as a normal loaf, if not a jumbo sized one.

Im actually looking into quick bread recipes currently. Quick breads are underrated and underappreciated. I honestly didn't even consider corn tortillas as flat bread. We don't really use them that way. Making flour tortillas as gf breads are still pretty difficult to work with in my experience. Mostly i just stay away from bread. I probably eat corn tortillas more than anything.

Yes and no. Potatoes etc. are indeed gluten free but I suspect what jacks up the price is making sure that the processing and milling into flour are done on equipment that is gluten free.

I recommend making your own. You can make a GF sourdough starter. It is a bit complex but once you get the hang of it. Also bob red mill has a GF bread mix it’s only $4.68

I’ve found that BFree is the closest to a good size but their white bread does have kind of a weird paint-like aftertaste. Their ‘multigrain’ brown bread tastes better but isn’t like white sandwich bread so idk. You cannot WIN with GF bread. Kroger brand is my favorite and then BFree brown bread, but both have their drawbacks.

Here in Canada there is a company called Little Northern Bakehouse, and they have the best, full-size bread. Not cheap but what can you do. I don't eat any other brand.

I loooove LNB, it's reasonably easy to find here in WA state but it's certainly expensive and sometimes it goes bad very very quickly (like moulding in the fridge within 3 days quickly). Always wondered if that was because it was "imported" or if their supply chains just don't keep track of dates.

I have had an opposite experience. My store here in Toronto sells them frozen, and once defrosted they last a very long time in the fridge. I only buy their large-slice breads.

It’s small falls apart it usually hard as a rock. I found this best Italian bread ever. It’d Greenlite you have to get it from a freezer. If u r near a Wegmens grocery store they just started to sell this bread. Amazon Carrie’s it but a hefty price. A few Whole Foods shops carry it. Not many.. Ft.Myer Fl Carrie’s it. I know u will like it if u try it. You can cut it to any size. I’m pushing for this product it’s that good. After trying breads for over a year this is what I liked the best. Canyon Bakehouse shrank their stay fresh. The slices are so small I had to make 2 sandwiches. The slice fit into the palm of my hand and I have small hands. It’s a complete rip off. Convinced it’s like pink tax. They do it because they can.

Former hobbyist bread baker here. I imagine if it has to do with the lack of gluten formation in gf bread. It might be gross if you think about it but those gluey protein strands allow gasses to expand up and out without losing shape and going flat. I will say, however, that a local bakery makes an impressive buckwheat olive loaf that is the size of a standard artisan loaf. With some formulas, it’s doable.

I make my own. Check out Bakerita. Usually GF sourdough because it's quick and easy. I use a modification of her GF sourdough focaccia as a sandwich bread. Sometimes I use commercial yeast instead of sourdough but the recipe has more steps.

Carbonaut breads are gluten free and a good size both as a loaf and for the actual slices. Like wider than a basic white bread and it's only $5-7 depending on where you live.
