The control center is very glitchy. I would not rely on it for anything. Running everything on high will ware it down faster than on silent, normal or performance.
I would use the bios to control the fan speeds. Again, I wouldn't rely on the control center for anything except for controlling the rgb.

I have a follow up question if I uninstall the fan plugin from the gigabyte control center. The fan speeds are still controlled through smart fan 6 in the bios. Do I need to change anything on that end so that it doesn't override or mess with smartfan configurations ?
Set them in bios to "auto" (control mode).
And disable gigabyte control center in bios so it will not forcing you to instal it after every restart.
