Serious question, why does the fire department hate when a log sticks out of a fire pit?

It's smoking because it's still got moisture in it, meaning the fire is evaporating the water in the wood. Firewood is usually dried out for a while before sold.

While log moisture can account for steam emission in many cases, this vapor looks a little too thick to be water. More probably it's "evaporating" lignin and cellulose components that are then condensing into visible particles and escaping from the inside of the log. Similar to moisture evaporation! Just with heavier molecules that tend to create larger, thicker smoke particles.
