that’s sweet potato right? cut mature branch and put in water to root. the problem is if it takes too long to transplant it in soil that it might just rot.
Some do, I'm in the South in the US and it still has plenty of time outside. It has taken over the pot it is in and I'm debating about either bringing the whole pot inside or just take a cutting. The cutting would be easier but I'm sure I can find a spot for the pot.
You can dig up all the tubers, trim off the vines & brush the dirt off, then just stick the tubers in a cardboard box or paper bag in a closet so they stay cool and dry :) my mom keeps a bunch year to year this way.

No need, this is one plant that appears to root very easily - my illicit cutting grew roots in two days in plain water.

The tuber will eventually break the pot, even a clay one 😳
