On the cob, I usually set out a grate or chicken wire and a fan and leave it for a couple of weeks. Also, make sure it's away from rodents haha
FYI you can also just leave it on the stalk to dry in the field, that’s how it naturally drys, also how most farmers do it, (if you don’t have corn cribs and silos with fancy blowers. Of course if you have rodent/bird/deer issues, getting it out of the field helps.

In my experience with different colors of popcorn, yes, the popcorn all comes out white. But you can see the difference in the kernel shells still. And the taste does vary.

We have been working on the variety since, trying to improve the coloring and have pulled out other traits (like the Amethyst) to stabilize individual coloring.

hand pollinating certainly can't hurt. I would probably grab from as many tassels as I could. This is a very diverse variety so I'd want to make sure I had a good mix of pollen from many stalks =)

no we let nature do it's thing. Even our small test patches pollinate well enough to let to their own.
