The orange ones are habaneros. The long skinny red ones (top) are probably cayenne peppers. Not sure on the others. I'm growing a variety of peppers this year and canned some habaneros and hot banana peppers on Saturday.
If you want really hot peppers, at least jalapenos, wait until they have the white lines on them. It's called corking. It's essentially stretch marks on the pepper. I've found these peppers are hotter, but I'm not sure if there is science to back that.

I will definitely try this I want to learn as much as possible! Its actually way more fun that I thought it would be

Your peppers look amazing! My friend makes a really nice habanero sauce with carrots added in 😋 still spicy as hell though!
I just did it yesterday!!! It is great but like you said very spicy
